Meet Our Chef
Anthony Petruno - Chef Petruno is a welcome addition to our team here at Captain Fishbones. Raised in Buffalo New York, he has traveled to perfect his craft from Italy to Florida and now to Marina Bay. Well versed in Italian Cuisine but aware of food trends and flavors that are far beyond being one note. Chef Petruno has already begun to wow our regulars and will definitely impress any new guests immediately. Always willing to listen to feedback and never too proud to change for guests satifaction.

    His approach to fresh quality ingredients is to keep it simple and let the ingredients speak for themselves. Even the most staunch seafood opponents will be tempted to enjoy the dishes he's creating, from a delicious Lobster Roll with a bright Lemon Dill Aioli to our new Signature Herb Crusted Salmon Risotto, he is making his mark and this is only the beginning.
